What is a Gaiwan
Gaiwan translates into 'bowl with a lid' in Chinese. It is composed by three parts: a lid, a cup (or cup shape bowl) and a source. It is traditionally used as a tea brewing vessel in Kung-Fu tea, although many who are naive to Chinese tea culture mistakenly assume it is a drinking tea cup due to its shape and size.

Gaiwan is commonly used to brew semi-fermented Oolong teas, fully fermented black teas or traditional eight treasure tea. As is has not got a inbuilt strainer, a strainer and a tea sever are often used in combination.
Similar to a teapot lid, a Gaiwan's lid is ideal to experience the aroma of a premium tea after enough steam from the tea brewing has accumulated and condensed on it.
What are the differences between a Chinese teapot and a tea Gaiwan
- A traditional Chinese teapot reserves the heat better than a tea Gaiwan, therefore draw deeper flavour from a tea with richer taste.
- A Gaiwan is better than a teapot when it comes to assess the tea aroma from the lid (盖香) as the wider lip and open allow the aromatic steam to set in a more gentle way without been overwhelming.
- A Gaiwan's wide open makes it easier to assess the wet leaves of a tea.
- Practicality wise, a teapot is less likely to spill over and easier to handle for some one who is not experienced with a tea Gaiwn
