Ageing and conversion is a unique nature of Pu-erh tea. Premium Pu-erh teas continue to ferment after their production (post-fermentation). The teas become increasingly aromatic, mellow and smooth, and develop certain characteristic aged Pu-erh aromas such as 'woody',  'date', 'ginseng' and 'Longyan'.

Yunnan Pu-erh teas are made of arbour tea tree leaves, with very different characteristics from the tea leaves harvested tea shrubs. When first harvested, they can be bitter, astringent, rough on stomach and not very enjoyable to consume. The post-fermentation of Pu-erh teas convert certain organic compounds to achieve the following:

  • tea brew colour becomes darker
