Cha Hai
Cha Hai (translates into 'tea sea' in English. It is a tea sever used to transfer the tea brew between the tea brewing vessel and the tea cups with the following function:
- For convenience for serving, especially a Gaiwan is used for brewing.
- To avoid over steeping. Brewing time is a crucial component in preparation of a cup of premium tea. By draining the brewed tea into the Cha Hai, it pauses the continuous brewing process in the teapot or Gaiwan, until it is time for the next infusion.
- For inspecting the tea colour and aroma.
Cha Hai is therefore a standard item for most of the Gong-Fu tea sets.
