Yunnan White Tea & Tangerine Peel Mini Cake

Also known as: Tangerine Peel White Tea, Chen Pi White Tea, Citrus White Tea Cake, Yunnan Mini White Tea Cake

Something a little different — a white tea cake pressed together with dried tangerine peel.

Smooth Yunnan white tea on one side, bright citrusy peel on the other, in a single-serve mini cake. Two classic Chinese ingredients that bring out the best in each other.

White Tea Meets Tangerine Peel

This is a pairing with real history in China — and it works beautifully in the cup.

The dried tangerine peel brings a fragrant, zesty citrus note; the Yunnan white tea brings smooth, honeyed sweetness. Together they land somewhere refreshing yet rich — the peel lifting the tea, the tea rounding off the peel. It's aromatic, warming and moreish.

Each little cake is one serve — just drop one in, add hot water, and go.

This Cake

  • Tea: Yunnan white tea — big-leaf, ancient-tree country in south-west China, known for fuller, honey-rich white teas.
  • Paired with: dried tangerine peel, for its bright, fragrant citrus character.
  • Format: pressed mini cakes, about 6g each — one cake per brew. Available in 60g and 120g.
  • Character: citrusy and aromatic up front, smooth and honey-sweet underneath.

The Four Types of White Tea

White tea is graded by how much bud and leaf goes into the pick:

Silver Needle is buds only; White Peony adds a leaf or two; Gong Mei and Shou Mei use more mature leaf. This cake pairs Yunnan white tea with tangerine peel for a fragrant, everyday brew.

The Two Homes of White Tea: Fuding & Yunnan

White tea has two great homes, and they make quite different teas.

  • Fuding (Fujian) — the birthplace of white tea and the region regarded as the best in China for it. Small-leaf bushes, bright and delicately sweet.
  • Yunnan — big-leaf, ancient-tree country in the south-west. Fuller, deeper, honey-rich white teas — the style used in this cake.

White Tea & Antioxidants

White tea is the least processed of all teas — just withered and dried — so it holds on to a lot of what's naturally in the fresh leaf, including its antioxidants. Paired here with fragrant tangerine peel, it makes a bright, aromatic, easy-drinking cup.

We'll leave the bigger health talk to others — we'd rather it earn its place by tasting good.

🍵 Brewing Guide

How to Brew Tangerine Peel White Tea

Wonderfully simple — each mini cake is a single serve, so there's nothing to break up or measure.

The Vessel: Gaiwan or Glass Infuser

  • The Gaiwan: the traditional choice, with close control over the pour.
  • Our Recommendation: our Glass Tea Infuser. All glass, so you can watch the tea and peel open up together.

Follow this for the perfect cup:

  • Temperature: 95–100°C. Near-boiling water lifts the citrus aroma and opens the pressed tea.
  • One mini cake to about 150ml. No need to measure — one cake per brew.
  • Step 1 – Warm the Vessel: Rinse with hot water and discard.
  • Step 2 – The Awakening: A quick 10-second rinse to loosen the cake and wake the peel, then pour off.
  • Step 3 – The Infusion: Pour gently down the inner wall.
  • Step 4 – Timing:

1st and 2nd brews: 20–30 seconds — the pressed cake opens gradually.
Each brew after: add about 10–15 seconds. Good for many steeps.

Master's Tip: Love the citrus? Break the cake up a little before brewing to let the peel open faster and the aroma come through stronger.

📦 Storage & Care

Storage Care for Tangerine Peel White Tea

Keep it simple — and keep the citrus aroma in.

  • Room temperature is best. Somewhere cool, dry, dark and stable. No need to refrigerate.
  • Keep it sealed against damp. Store the mini cakes in their wrapper or a container, out of moisture. A dry spot keeps both the tea and the peel in good condition.
  • Away from light and strong smells. The peel is aromatic — keep it clear of coffee, spices and anything with a competing scent.
  • Keep it dry. Moisture is the main enemy for any white tea.

Like all white tea, it deepens gently over time — the citrus mellowing into the tea's honeyed sweetness.
