Every so often a tea genuinely surprises us. This was one of them.

Shou Ning Silver Needle comes from a quiet corner of Fujian that most white tea drinkers have never heard of — and the first time we tasted it, we knew it had to go on our shelf.


A Hidden Corner Between Fuding and Zhenghe

Shou Ning sits tucked in the mountains between the two famous names — Fuding and Zhenghe — and somehow stayed in their shadow.

It's high, remote and unspoilt, with tall mountain ranges and steady, reliable weather. In 2015 it was named one of China's ten eco tea-producing areas. Beautiful tea country that the crowds simply haven't found yet.


Why We Added It to Our Range

We're always trying new teas — it's part of what we do. We're forever on the hunt for something special to bring back to our customers' cups here in Australia, and every so often one really stops us in our tracks. Shou Ning was one of those.

There's a crisp, high-mountain clarity to it, the kind you get from tea grown right up in the cold and mist. But underneath that runs the soft, clean sweetness of good white tea — a gentle honey note, a whisper of orchid, a sun-dried aroma from the open-air withering.

That combination — high-mountain edge and white-tea sweetness — is what sold us. It's a genuinely high-end Silver Needle, at a price that still makes sense. We knew our white tea lovers had to taste it.

Don't Rinse It — Keep the Down

Like every good Silver Needle, this one is coated in fine white down, and some of it will drift in the cup as it brews.

Don't rinse it away. Those silvery hairs — the hao xiang — are one of the best parts of the tea. A little haze in the liquor is a sign you're drinking the real thing.

How to Brew Shou Ning Silver Needle

Shou Ning is a high-mountain Silver Needle — all tender buds, so it asks for a gentle hand: cooler water, a soft pour, no harsh rinse.

The Vessel: Gaiwan or Glass Infuser?

  • The Gaiwan: the traditional choice, with close control over the pour.
  • Our Recommendation: our Glass Tea Infuser. All glass, inside and out — watch the silver buds stand and the down drift free. Lift the inner glass any time to separate the buds from the liquor, so it never over-steeps.

Follow this ritual for the perfect cup:

  • Temperature: 85–90°C only. Never boiling — it scalds the tender buds. Let boiled water stand a minute or two first.
  • Leaf to water: about 5g to 110ml.
  • Step 1 – Warm the Vessel: Rinse the glass with hot water and discard.
  • Step 2 – The Inhale: Add the buds, shake gently, and breathe in the sun-dried, honey-and-orchid fragrance.
  • Step 3 – The Awakening: Add just enough water to barely cover the buds, and let them wake for about 5 seconds. Don't tip it away — you keep the down, never rinse it off.
  • Step 4 – The Infusion: Pour gently down the inner wall, never straight onto the buds.
  • Step 5 – Timing:

    1st and 2nd brews: 15–20 seconds.
    Each brew after: add about 10 seconds. High-mountain buds hold up well — good for 8–10 steeps.

📦 Storage & Care

Storage Care for Shou Ning Silver Needle

White tea is easy to keep — and built to last. Store it well and it slowly gets better.

  • Room temperature is best. Somewhere cool, dry and dark. No need to refrigerate — a steady pantry shelf is ideal.
  • Seal it, but let it breathe. Airtight against damp and odours, but don't vacuum-seal — white tea needs a little air to keep maturing over the years. A Tea Bag Sealer is handy for resealing between sessions.
  • Away from light, damp and smells. An opaque tin, ceramic jar or its sealed pack protects the down and aroma best. Keep it clear of coffee, spices and anything strongly scented.
  • Keep it dry. Moisture is the one real enemy — a dry spot means it ages cleanly instead of turning musty.

Shou Ning ages beautifully too — that high-mountain character deepens with the years. "Store new, drink old."
