Bi Luo Chun is one of most prestige Chinese green teas. It was originally grown at the Dong Ting Mountain of the Tai Lake in the JiangSu province of China. The Dong Ting Mt is composed by two islands (see map), the Eastern Hill and the Western Hill, both producing premium quality Bi Luo Chun. It is however believed that the Easter Hill (Dong-Shan) Bi Luo Chun is of the highest quality.
The production of Bi Luo Chun at Dong-Shan is still family based. The teas are harvested and processed in its traditional way â by hand only. During my (En Jie) last visit to the area in 2010, I noticed the only equipment that is considered to be âmodernâ is the gas stove. It was explained to me that due to various temperature requirements of the different stage of processing, a gas stove allows more accurate control.
The Dong-Shan Bi Luo Chun is classically light to began in it taste, following be a refreshing and exquisite after taste. The tea bushes are cultivated among a unique species of Pi Pa (Loquat) orchard trees (see image). Among many reasons, one is that the cross-pollination enhances a unique fruity flavour in the Bi Luo Chun tea brew.Â
